Popsicles

Two days ago, my daughter, Hannah, (who just turned 6), apparently got inspired, because she went into the kitchen and took out these ingredients, saying, “Mom, I’ve taken out the stuff we need to make some popsicles!”.

And honestly, she was right. I’d made a similar combination just days before, while feeling a bit lazy.

Since we're nearing the end of a hot South African summer (with severe water restrictions due to draught), popsicles are a huge hit! I know she was getting excited for her friend Raine to come over for a play date yesterday, so she wanted to make something special for them to enjoy together. 

Here are our two (similar - and simple) recipes that we’ve tried out this week:

Crazy Simple vanilla “frozen yogurt”:

-      ¾ cup of plain double cream (unsweetened) yogurt (if you can’t tolerate dairy, or want to make this paleo or vegan, you can just use coconut yogurt or replace it altogether with just using the coconut milk)

-      ½ cup coconut milk

-      2-4 tbs of honey (if you’d like vegan, you can shoot for maple syrup instead, or even delicious coconut nectar)

-      1 tsp vanilla powder (if you only have vanilla extract, you can use 2 tsp) – I love seeing the little specs of vanilla

 

See, I told you I’d keep things simple!

Just pop all these ingredients into a blender (I prefer Vitamix or even a Nutribullet), and spoon it into your molds. Some of my favourite Zoku molds that we’ve owned and loved are these ones:

-      1/3 cup freeze-dried fruit like bananasstrawberriesraspberriesmangoes, or pineapple (you can add more if you'd prefer a stronger flavor)

Again: simply blend and freeze!
