Seriously simple 4-ingredient cookies (we made them Christmasy too)
Today, we had an urge to bake cookies, but we actually had plans to head out (we were going to the Hillsong Christmas Spectacular). So we couldn’t do fancy ones. We had to do the quick throw-together ones.
While these can be 4-ingredients, we decided to add chocolate chips, and then my daughter decided she wanted to add essential oils to them too, to make them into Christmas cookies.
There’s no separating. No sifting. Just throw everything together.
Preheat oven to 180 C, or 360 F.
Ingredients:
1 cup Nut butter (or you can use peanut butter). I like to use half macadamia butter, and half peanut butter if I’m trying to keep costs down. You can also use sunbutter or almond butter.
1 cup sweetener (for me this is too sweet - I find that 1/2 cup is perfect). You can use monk fruit sweetener, birch xylitol, coconut sugar, or regular sugar
1 egg
1 tsp vanilla, or 1/2 tsp of vanilla powder
(optional) 1-2 oz chocolate chips (we used 1 oz, but I think 2 would’ve been better)
(optional) vitality versions of essential oils (my daughter chose 1 drop each of Christmas Spirit and Cinnamon Bark to make them Christmas themed - peppermint would probably be good too)
Cookie batter
Once you’ve mixed everything together, and the oven has pre-heated, spoon your batter onto a parchment paper-lined baking sheet. Bake for 12-15 minutes (keep an eye on it). Allow them to cool, and enjoy. It makes about a dozen larger cookies, or more if you make bite-sized ones.
