Throw together brownies
Something magical happened here.
I’ve made these brownies so many times, but now I’ve added 1 ingredient that somehow made it even better than it was before. Which I didn’t think was possible.
These brownies are truly so simple. There’s no order, no separating, no sifting (I mean, you could if you really wanted to, but it’s not necessary). You throw the ingredients together to combine, and bake them. Done. You could probably even put the ingredients into the baking dish and mix it in there if you wanted to keep it even more simple.
Here are the ingredients:
1/4 - 1/2 cup of cacao, depending on your taste preference
1/4 tsp baking soda (also called bicarbonate of soda)
1/8 tsp salt
1/2 cup of nut butter, like macadamia butter (my favourite), almond butter, sun butter. You can also use peanut butter (but that’s not a nut)
1/2 cup sweetener. Surprisingly this can work well with a liquid or a granulated sweetener. In order of preference, here are some options: Monk Fruit sweetener, coconut sugar, birch xylitol, honey, maple syrup, coconut nectar, or just old fashioned sugar. You can also do a combination of any of these to make up the half cup.
1/4 cup of liquid fat of your choice, like coconut oil, butter, ghee
2 eggs
1 tsp vanilla, or 1/2 tsp powdered vanilla
2-4 drops of peppermint essential oil, depending on your taste preference (get your premium starter kit, which includes the peppermint essential oil) - this is the extra ingredient by the way.
Preheat your oven to 325 F, or 160 C. Combine all ingredients, and pour into a 8x8 oven-safe dish. If it’s not a glass baking dish, you can line it with parchment paper. Bake for 20-25 minutes.
This makes 16 brownies. And yes, they make an excellent breakfast.
